| SUPER PEANUTTY LAYER CAKE Ingredients 1 c peanut butter, smooth or crunchy 1/2 c shortening 2 1/4 c packed brown sugar 3 eggs 3 c flour 1 TBSP baking powder 1/2 tsp salt 1 1/4 c milk 1 1/2 tsp vanilla extract 1 c roasted peanuts, if desired for frosting 5 c powdered sugar 1/2 c butter or margarine 3 TBSP peanut butter 8 oz cream cheese 1/2 tsp vanilla extract Instructions Cream peanut butter and shortening and gradually add sugar. Add eggs one at a time, beating well after each addition. Combine flour, baking powder, and salt. Add dry ingredients to creamed mixture alternately with milk. Stir in vanilla and, if desired, peanuts. Pour into three greased and floured cake pans. Bake at 350 degrees for 20 to 25 min or until pick inserted in middle of cake comes out clean. for frosting Combine all frosting ingredients and beat well. Frost cooled layers.
