2 c self-rising flour (or mixture pf 2 c minus 4 tsp all-purpose flour plus 3 tsp baking powder and 1 tsp salt)
6 TBSP shortening
1 c sharp cheddar cheese, shredded
3/4 c buttermilk
1 tsp dry mustard
1/4 tsp baking soda
Cut shortening into flour until it resembles coarse meal. Stir in cheese. Combine buttermilk, mustard, and soda and add to flour, mixing well. Turn onto lightly floured surface and knead 3 or 4 times. Roll 1" thick and cut into 2" rounds. Place on lightly greased baking sheet. Bake at 450 degrees for 10 to 15 min or until lightly browned.
