Eggplant Parmesan Ingredients 1 large eggplant 1 1/4 c flour ..1/2 tsp pepper ..1/2 tsp garlic powder ..1/2 tsp basil ..1/2 tsp oregano 3 eggs, slightly beaten 2 c mozzarella cheese, shredded 15 oz can tomato sauce ..1/2 tsp basil ..1/4 tsp pepper ..1/4 tsp salt ..1/2 tsp garlic powder 1/3 c Parmesan cheese, grated Instructions Slice eggplant into 1/4" rounds. Place in colander and sprinkle both sides of each round with salt. Let stand 15 min. Pat dry wtih paper towel. Mix flour with next 5 ingredients. Dip both sides of eggplant rounds first in seasoned flour, then egg, and then flour again. Fry in large skillet in 1/2" cooking oil until both sides are browned, about 2 min per side. Drain on paper towel. Mix tomato sauce and next 4 ingredients. Spread 1/2 c sauce in bottom of baking dish and top with 1/2 of eggplant. Top with sauce and mozzarella , and repeat layers. Sprinkle top with Parmesan. Bake at 350 degrees for about 20 min or until hot and bubbly. Serve with pasta, such as spaghetti or fettuccine, if desired. |
