The Best Spinach Artichoke Dip Ever
I copied this from the Pioneer Woman’s website and tried it for the first time yesterday and it was the best spinach and artichoke dip I ever made. It takes a while to put together but it is well worth it.

Ingredients
6 tablespoons butter, divided
4 tablespoons garlic, minced
2 6 oz. bags of baby spinach
2 jars of artichokes, rinsed and drained
Salt and pepper to taste
3 tablespoons flour
1 ½ cups whole milk, (more if needed)
1 8 oz. packaged of cream cheese, softened
½ cup crumbled feta cheese
½ cup parmesan cheese, grated
¾ cup pepper jack cheese, grated
¼ teaspoon cayenne pepper
Extra grated pepper jack
Pita wedges, tortilla chips, crackers

Directions
Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir around and cook for a couple of minutes until the spinach wilts. Remove the spinach from the skillet and put it in a small strainer. Squeeze the excess juice back into the skillet. Set the spinach aside.

Throw in the artichokes and cook over medium high heat for several minutes, until liquid is cooked off and artichokes start to get a little color. Remove the artichokes. In the same skillet, melt the remaining 3 tablespoons of butter and whisk in the 3 tablespoons of flour until it makes a paste. Cook over medium heat-low heat for a minute or two, then pour in the milk a little at a time until slightly thickened, splash in more milk if needed.

Add cream cheese, feta, parmesan, pepper jack, and cayenne and stir until cheese are melted and sauce is smooth. Chop up artichoke and spinach and add to the sauce. Stir to combine.
Pour into a buttered baking dish. Top with extra grated pepper jack cheese and bake at 375 degrees until cheese is melted and bubbly.
Note – After the artichokes were cooked I placed them and and spinach in a blender and blended until there were no more lumps.

Serve with the wedges, chips or crackers.
