Julie's E-Z Cookies.

1 box chocolate cake mix
2 eggs
1/2 cup oil
Mix together and add:
1/2 cup chopped nuts
1/2 cup chocolate chips

Form into balls and roll in powdered sugar before baking.
Bake 8 to 10 minutes, the cookies will flatten slightly and be browned on the bottom.
These are so chewy and good it is almost illegal!

Sis Kathy "Drop it Cake"
1 white cake mix
1 box orange jello
2 boxes frenchvanilla mouse mix

Bake the cake, let cool 15 minutes. mix the jello w/ 2/3 cup boiling water. stir until disolved, then add 2/3 cup cold water.
Punch holes in cake, then pour jello over it. put in refridgerator for at least 2 hours. meanwhile, make the mouse according to the package directions. cover and put in fridge.

When ready to serve, put mouse on the cake. Pick it up and drop it upside down!

LK's Monkey Bread

2 cans of cheap biscuits, cut into 1/4's
roll each piech in a bowl with 1/2 cup sugar, and 3 TBL's cinnamon
Place sugar coated pieces of biscuits into a well greased bundt pan

In small sauce pan, melt 1/2 cup of butter, (margarine will work) and 1 cup of brown sugar. Once sugar is dissolves and looks like syrup, pour over biscuits. Any kind of nuts can be added at this point also, if desired.
Bake in 350 oven, until nice and brown. I push mine to about 35 - 40 minutes. I like mine crispy!
BE CAREFUL. THIS IS REAL HOT.
Place a plate on top of the bundt pan, and quickly turn over. Some of the syrup will run, but that is ok, Just don't burn yourself!!!
And this is my recipe for Monkey bread.
It is called monkey bread, because once you see someone pulling off a piece, you have to do it also.

Sistah Judy's Tuna Casserole
3 cans of drained tuna/w water flaked apart.
1 can of peas/drained
Cook your noodles drain
mix well with egg beater
2 can of cream of mushroom
1 can of milk

You can layer it all pretty or you can mix it all up, lol I mix it all up.
Top it with crush chips if you like or greated cheese.
Cover and bake in oven 325 for about an hour...will be bubbly.
...LOL, or you can tell its done by the smell!! Let stand for about 10 15 minutes to thicken and whalla Tuna casserole, ENJOY!

Trisha's Chocolate Pie

Refrigerator Chocolate Pie

2 1/2 Cups milk 4 egg yolks
2 (3oz) squares of chocolate 2 Tbsp. Butter
1/3 Cup flour 1 tsp vanilla
1/4 cup (whole) milk 1/8 tsp. cinnamon

Scald milk over low heat stirring constantly. Add cut up chocolate. In a separate bowl mix flour and milk until smooth and add salt, sugar and cinnamon. Watch and stir carefully (can be put in double boiler) Cook and stir for 15 minutes (careful not to scorch) Pour a small amount over beaten egg yolk. Beat well and add to mixture in double boiler. Stir and cook the custard for 3 minutes. Add butter. Remove from heat and beat until very smooth. Add vanilla. Let cool. Pour into baked Pie shell. Chill. Top with Whipped cream and grated chocolate.

Laura's Cock-A-Leekie Soup

1 lg Onion, chopped
2 lg Stalks celery, chopped
6 Carrots, chopped
1 lg Roasting chicken
3/4 c Pearl barley
6 Peppercorns
4 Cloves
6 lg Leeks
Salt & pepper to taste
1/2 c Fresh parsley, chopped
3 qt Water (approx.)

1. In a large kettle, place onion, celery, carrot, and spices.
2. Clean leeks thoroughly; chop coarsely, discarding any tough parts.
3. Rinse chicken and discard any excess fat.
4. Add to kettle with leeks and barley. Cover with 3 qts. of water (or however much it takes to cover chicken). Bring to a boil, skimming top.
5. Reduce heat to medium and simmer, partially covered for 1 hour. Remove chicken, bone and chop, then return to kettle. Add salt, pepper, parsley
6. Cook 15 minutes.

Cajun Crawfish Cornbread
2 cups cornmeal
1 tbsp. salt
1 tsp. baking soda
6 eggs
1/4 cup. chopped parsley
1/4 cup. chopped jalapenos
1 large onion, finely chopped
16 ozs. grated sharp cheddar cheese
2/3 cup oil
2 - 16. oz cans cream style corn
2 pounds peeled crawfish

Combine first 3 ingredients. In another large bowl, beat eggs thoroughly. Add your veges, cheese, oil, cream of corn and crawfish to your beaten eggs.
Then combine this mix to your cornmeal mixture and mix well. Pour into greased 12 X 14 baking dish.
Bake at 375 for 55 minutes until golden brown.

"Praline Pecan Pie "

8 ounces cream cheese
8 ounces cool whip
1 can condensed milk
9" graham cracker crust
1/2 cup pecans, chopped
2 tablesopoons butter
Hersheys caramel syrup

Mix cream cheese with condensed milk. Fold in cool whip. toast pecans in butter. Let cool. Layer into pie shell,
A 1/2 of cream cheese mixture. A 1/2 layer of caramel syrup and 1/2 of toasted pecans. Repeat layering process.
Freeze until firm.

1 box Spice cake mix
2 eggs
1/2 cup oil
Mix together and add:

It is hard to believe but these are even better than the chocolate!!!.

Lazy Sistah Fried Rice

Cold left over rice, de-clumped
Minced garlic
Soy Sauce
Red pepper flakes or pepper
Eggs
Shredded cooked chicken or cubed ham
Can of mixed veges, drained

Heat oil in wok or a large frying pan. Sweat garlic till fragrant, add rice. Push rice aside leaving an empty spot in wok/pan.
Add a little oil in that space and beat eggs in it briefly before adding rice. Keep stirring egg and rice mixture till you notice the eggs are becoming firm.
Add in your meat and veges.
Then add soy sauce, depending on your taste.
Add red flakes or pepper.

Before serving, I normally garnish with chopped green onions.

If you dream it you can do it.
i make a easy cassarole my husband wants all the time now i never measure but try to put down someone wants to try this.

use 1 or 2 cups of rice if need lot use 2 cups cook while its cooking cut up fresh broccole in hunks. , and couple big chicken breasts cut up in hunks to or use as much want. and can use frozen broccale i spelled it wrong both times sorry, when rice is nealy done put in you cass. dish mix the broc., chicken ,rice all together cook about 15 minutes then put cheese in it either sliced american or couple differant shredded ones , also can add can of water chestnuts if have on hand..
probably way i put this down don't sound good this is one thing he don't gripe about well onece said was dry and why he left it in microwave for 4 hours! Oh i put pepper in it , parsley, to couple others he will not let me use any salt in anything not even sea salt.



hope can figure out what i do.. sorry..

This is similar to a box dinner you can get at the grocery store but I like mine better. All you need is two ingredients.
1 can of biscuits.......do not use the flaky layered ones. Just regular biscuits will do. If you like you can use your own biscuit recipe or mix.
2 cans of chunky soup....any flavor will do. My group likes the chicken and mushroom variety. Sirloin burger is really good as well.

Spray or oil a square 9x9 cake pan. Place the biscuits on the bottom of the pan. Pour the chunky soup over the biscuits.

Bake at 350` for 20 minutes or until the biscuits have risen to the top and look done.

That is all there is to it.

Easiest way to make those Italian sausage sandwiches you get at the fair. Only this is the sloppy joe version. Hope you like it.

Start with 3 lbs Italian sausage........I use bulk sausage. This is for sloppy joes, not link sandwiches. Brown it with 1 chopped onion and 1 chopped green pepper. I usually add one minced clove of garlic as well. Stir in 2 cups Tomato and Basil spaghetti sauce. I find that the chunky sauce is the best. I add 1 cup of water and let it simmer for about 20 minutes.

You can use any type of bun with this recipe. I use just plain hamburger buns. I place them open faced on a cookie sheet and stick them under the broiler for about a minute. Just to toast them up a bit. Pull them out of the oven, place mozzarella cheese on the top face. Place the sloppy joe mixture on the bottom. Close and serve.

Gwen on PNW had an idea....how about starting a new Thread for each recipe. That would make it easier to find a particular recipe and people could comment and post variations they try for a recipe. It would keep the site from getting way too long. Just and idea.

I don't usually use any, if any to add spices and ingredients either...Just measure what looks like enough or just a tiny drop or sprinkle. lolol
oh and giggle giggle I know when it's done cooking when it's smells ready. Ohhh, I am so glad I'm not alone with this method. Sticking tongue out

Judy and Twyla you are not alone. I don't measure either. Drives my Mom nuts when she wants a recipe. I must get it from my Great Grandmother though. I have recipes of hers that say "use a handful" of this or that. Always seems to work for me. Thumbs up
