|Mom's Corn Pudding
2 cans creamed corn
1 can whole kernel corn (drained)
2-4 TBLSP. sugar (I use honey)
Beat together, and add to corn mixture
1/2 stick butter, melted
Stir together in separate bowl, then stir into corn/egg mixture
2/3 c. evaporated milk
4 TBLSP cornstarch
Preheat oven to 375, pour batter into sprayed or buttered flat baking dish. Bake for one hour or until a small knife stuck into the center comes out clean and top is starting to brown.
NOTE: you can use a deep casserole, but it may take a little longer to bake thru to the center to set
Now, my DIL makes this one, which is really good, more firm because of the Jiffy mix:
1 stick butter, melted
2 eggs, beaten
1 box Jiffy corn bread mix
1 can whole kernel corn, drained
1 can creamed corn
1 cup sour cream
Preheat oven to 350. Mix together butter, eggs, corn bread mix, whole and creamed corn and sour cream. Pour into buttered 9" square baking dish.
Bake 45 min. or until center is done and top starts to brown.
Either way, our family pretty much devours this stuff, hope you enjoy it!
PS: The DIL added shredded cheddar to hers last year, and my big brother adds a few chopped jalapenos to his..

|I don't remember posting the above, but since it's been so long, anything is possible....lol Was I trading recipes with someone and it got transferred to a Cubit somehow? I don't think I would even know how to make my own cubit...
anyhoo... Here's a Jiffy Mix Clone recipe to use, but I'm sure somewhere in Canada they sell cornbread mixes. I was raised on these Jiffy mixes. They are a small box, a little bigger than a box of baking soda, and make an 8" square pan of cornbread. The company also sells cake mixes (1 layer), cookie mix (makes 1 dozen or so) and frosting mix. Not sure if they sell all products any longer, but they were just right for a quick dessert or for someone living alone..
Jiffy Cornbread Mix Clone
2/3 Cup Flour
1/2 Cup Yellow Cornmeal
3 Tablespoons Sugar
1 Tablespoon Baking Powder
1/4 teaspoon Salt
Stir together dry, then add the following just until moistened:
1/3 Cup Milk
2 Tablespoons Veg. Oil
Makes 1 8" or 9" pan, or can use muffin tins.
Bake at 400 Deg, 15-20 min.
