Bulgar Wheat And Fruit Salad 1 cup bulgar wheat 2 cups water 1 small red onion chopped 1 or 2 nectarines coarsely chopped 1/2 cup chopped dried cherries 1 can of red kidney beans 1/2 cup EVOO 3 TBS white balsamic vinegar 2 tsp. Dijon mustard 2 packets of Truvia or a little Agave nectar (to take the edge off the vinegar) Salt and pepper to taste Cook wheat according to package directions. Drain and cool. Add onion, fruits and beans. Whisk dressing and pour over salad, Stir and refrigerate for a bit. Better after it sits for a while. Hope this works for you. I don't measure much. Juanita |
