Mom's Corn Pudding Mix together 2 cans creamed corn 1 can whole kernel corn (drained) 2-4 TBLSP. sugar (I use honey) Beat together, and add to corn mixture 4 eggs 1/2 stick butter, melted Stir together in separate bowl, then stir into corn/egg mixture 2/3 c. evaporated milk 4 TBLSP cornstarch Preheat oven to 375, pour batter into sprayed or buttered flat baking dish. Bake for one hour or until a small knife stuck into the center comes out clean and top is starting to brown. NOTE: you can use a deep casserole, but it may take a little longer to bake thru to the center to set Now, my DIL makes this one, which is really good, more firm because of the Jiffy mix: 1 stick butter, melted 2 eggs, beaten 1 box Jiffy corn bread mix 1 can whole kernel corn, drained 1 can creamed corn 1 cup sour cream Preheat oven to 350. Mix together butter, eggs, corn bread mix, whole and creamed corn and sour cream. Pour into buttered 9" square baking dish. Bake 45 min. or until center is done and top starts to brown. Either way, our family pretty much devours this stuff, hope you enjoy it! PS: The DIL added shredded cheddar to hers last year, and my big brother adds a few chopped jalapenos to his.. ![]() |
