|Maria, the blintzes she made were like the ones you remember. I have had them folded over into little pillows, but that recipe with the filling using an egg sounds much more time consuming than the simple way of just folding twice into a roll with cottage cheese, cream cheese and fruit inside. She only used the oven to keep them warm while cooking the rest of them, added the blueberries and powdered sugar and they were ready for the table. I have also had them with strawberries. The recipe using lemon sounds quite refreshing if nothing else was available, or just for variety.
Of all the things I've lost, I miss my mind the most.
