What do you do with your parsnips?

I've been enjoying them in soups over the winter, but I just harvested the last few to clear out that bed for spring planting, and this warm weather has me in no mood for soup. I was thinking of baking them with some other veggies (sweet potato, onion, and butternut squash, perhaps), but I'd love to hear more creative ideas.

I hadn't either until this year. I know they're a traditional staple of winter gardens, so I planted them... but now I'm not sure what to do with them all Whistling
