Note from the Diva
I didn't have the fresh apricots for this recipe and I wanted to make it for an Indian Dinner we are having in a few weeks. With Susie's help we re-wrote the recipe using dried apricots. When apricots are in season, I will try it again with fresh because it is sure to come out differently.

List of Ingredients
Original Recipe cut by 1/4
1/2 cup water
16 dried apricots, snipped into smaller bits
1 cup, red onion, diced
1 cup raisins
1 cup brown sugar
1/2 cup apple cider vinegar
1 tsp chili powder
1 tsp mustard seeds
½ tsp kosher salt
½ tsp turmeric
1 tsp cinnamon

1 tsp grated fresh ginger.

Preparation
We kept it at a very low simmer in heavy pot covered about 3 hours to allow extra time for the apricots to soften. When it had thickened, we stirred in the fresh ginger.

Cooking Time & Temperature
Simmer 3 hours.
