We love crab but it is very expensive. My favorite is made by Phillips and comes canned.
We never use the crab-flavored seafood (made with surimi) but it works
with this recipe.

List of Ingredients
4 cups mixed baby greens
1 carrot cut in matchsticks
Cherry Tomatoes
1 avocado
Thinly sliced red onion rings
fresh asparagus spears (steamed crisp tender)
1 lb Crab or Alaskan Snow Legs
Dressing
2 cups reduced fat mayonnaise
1/2 cup ketchup or chili sauce
1/4 cup sweet pickle relish
1/8 cup finely diced red onion
2 hard boiled eggs, peeled, & pressed through a ricer
3/4 cup Creamy Horseradish Sauce or 3-4 T prepared horseradish
1 T fresh lemon juice
1/2 tsp grated lemon zest |
Preparation
Arrange greens & vegetables on serving platter.
Cut Alaskan Snow Crab Legs in half and arrange over top of greens.
Stir together dressing.
When ready to serve put dollops of dressing on the salad and
pass remaining dressing.
Garnish with black olives if you wish. |
